Veggie and Egg Burrito

Our Farmer's Market is a really little one.  We are new this year, only a few months old, and in a very small town, so that is to be expected I suppose.  Still, we average only 7 or so vendors each week, and some of those are craft vendors.  With such small offerings, it can be hard to see the market as a place to get your family's groceries, but it can be.  Honestly, that is one of the reasons I decided to start this blog.  I thought it could be helpful to offer recipes and meal suggestions featuring items available each week at the market.

Pictured  below is a veggie and egg "burrito" that my family loves.  We make it for supper at least once a week using our pastured eggs and any in season veggies.  We simply caramelize an onion and the veggies in butter with a little Celtic Sea Salt then scramble some eggs, add a little cheese, then wrap the mixture in a tortilla.  Right now our market is featuring pastured eggs, squash, zucchini, egg plant, tomatoes and peppers that would all be wonderful in this burrito.    All you would need from the store is cheese, an onion and the tortillas (though you could leave the tortillas out if you are low carb).  For a little heat, you could serve it with some homemade Chow-chow (also available at the market) and have some of the wonderful sweets or watermelon from the market for dessert.
